Fresh Herb Sun Tea

sun tea - herbsFarmer Cathy Sullivan of the Sunshine Farm in Damon, Texas is one of my favorites at Houston’s Farmer’s Markets. On a visit to her farm, she shared her recipe for sun tea. She makes it with herbs in her gardens. She picks the herbs in the morning, places them in a big jar with fresh water and lets it sit in the sun to steep. She drinks it all day long – it tastes great and keeps her hydrated. Here are the herbs she put in today’s batch:

  • Lemon grass
  • Mint
  • Lemon balm
  • Blackberry leaves (for potassium, extra great for the body when working in the heat and sunshine)
  • Cilantro

Cathy is a regular at The Farm Stand At Petrol Station in Garden Oaks, Houston. She is known for her eggs and has wonderful produce too!
